The word 'patanisca' derives from the Spanish 'patanisquear', meaning to make small portions. This humble recipe, born from the need to use leftover salt cod, became a classic of Portuguese cuisine. Traditionally served with bean rice, pataniscas represent the genius of Portuguese home cooking in transforming simple ingredients into memorable dishes.

  • 400g desalted and shredded salt cod
  • 150g all-purpose flour
  • 2 eggs
  • 1 small onion, finely chopped
  • 3 tablespoons chopped parsley
  • 1 clove garlic, minced
  • 150ml water or milk
  • 1 teaspoon baking powder
  • Oil for frying
  • Salt and pepper to taste

    In a large bowl, mix the flour, eggs, and water (or milk) until you get a smooth batter.

    Let the batter rest for 15 minutes.
