Portuguese Cod Fritters
Delicious fried codfish fritters with fresh parsley. A traditional Portuguese snack, perfect as an appetizer or main course served with bean rice.

Pataniscas de bacalhau originated in Lisbon's taverns, where they were served as snacks alongside a glass of wine. The word 'patanisca' derives from the Spanish 'patanisquear', meaning to make small portions. This humble recipe, born from the need to use leftover salt cod, became a classic of Portuguese cuisine. Traditionally served with bean rice, pataniscas represent the genius of Portuguese home cooking in transforming simple ingredients into memorable dishes.

- 400g desalted and shredded salt cod
- 150g all-purpose flour
- 2 eggs
- 1 small onion, finely chopped
- 3 tablespoons chopped parsley
- 1 clove garlic, minced
- 150ml water or milk
- 1 teaspoon baking powder
- Oil for frying
- Salt and pepper to taste

In a large bowl, mix the flour, eggs, and water (or milk) until you get a smooth batter.

Add the baking powder and mix well.

Add the shredded cod, onion, garlic, and parsley to the batter.

Season with salt (sparingly, as the cod is already salty) and pepper.

Let the batter rest for 15 minutes.
