Chicken Stroganoff ๐ง๐ท
Despite the Russian-sounding name, this creamy dish with chicken, mushrooms, and crispy potato sticks is 100% Brazilian! Russians look at this and ask 'ััะพ ััะพ?' (what is this?). We answer: it's delicious, end of story.

๐ The Story
The original Russian stroganoff, created in the 19th century for the Stroganov family, was made with beef and smetana (sour cream). When it arrived in Brazil in the mid-20th century, brought by European immigrants, it underwent a radical transformation. Since sour cream wasn't common in Brazil, it was replaced with fresh cream. Tomato sauce, ketchup, and Worcestershire sauce were added. Beef was swapped for chicken. And of course, it's served with white rice and crispy potato sticks โ a combination no Russian would ever recognize, but one that has conquered millions of Brazilian and Portuguese-speaking hearts.

- 500g chicken breast
- 100g mushrooms
- 125g light cream
- 30g tomato paste
- 1 small onion
- 1 tablespoon soy sauce
- 2 tablespoons Dijon mustard
- Olive oil to taste
- Salt and pepper to taste
- Fresh chives to taste
- White rice to serve
- Crispy potato sticks to serve

Slice the chicken into thin strips and season with salt and pepper. Set aside.

In a wide pan with olive oil, sautรฉ the diced onion until translucent.

Add the chicken strips and brown on low heat for several minutes.

Add the sliced mushrooms and mix well. Cook briefly.

Combine the soy sauce, tomato paste, Dijon mustard, and cream. Adjust seasonings and simmer for 5 minutes.
